Hash

 

Ingredients:
1/2 cup chopped, or sliced, red onion
2 cups red potato (I steam them before, then cut into cubes)
1/2 cup petite peas
1/4 cup burger *
Seasoning (Italian is my preference for this dish)
Broth *
1 tbsp. pimento

Preparation:

In a medium skillet, sauté the onion in your favorite cooking oil. (I usually add a couple spoons of water, and cover, to produce some steam.) When the onion is cooked, but slightly firm, add the potato cubes, burger, cooked peas, broth and seasoning. Stir to evenly coat the potatoes with the broth mixture. Warm over medium heat, adding more oil if necessary. Cover the skillet, stirring occasionally, until warm throughout.

Hash makes a great entre. And for a quick meal, a scoop of hash over some chopped lettuce or spinach (cooked or raw) is quick and easy (I spray a little soy sauce, or vinegar, on the lettuce for flavor). Hash is also very tasty when used to make breakfast burritos.
