Biscuits and Gravy

Ingredients: (Biscuits)
1 cup white bread flour
2/3 cup wheat bread flour
1 tbsp. baking powder
1/2 tsp. salt
2/3 cup soy milk (plain)
1/3 cup melted buttery spread *

Preparation:

Mix all the ingredients in a bowl until you have a dough you can handle. Sprinkle flour on your hands and pick up the dough to kneed for a couple of minutes until you feel it is completely mixed. Scoop out approximately 2 large tbsp. of dough and shape into a biscuit. Place on a lightly greased baking sheet (about 12 inch). You should get 8 to 10 biscuits depending on the size you create. Bake at 450 for 14 minutes (this is the time for a toaster oven) or until they are sufficiently browned for you.

Ingredients: (Gravy)
Cooking oil. (We use avocado or olive)
1 tbsp. wheat flour and 2 tbsp. white pastry flour
1/4 cup chopped onion (optional)
1 rounded tsp. broth powder *
1/4 cup burger *
1 cup soy milk (plain)
1/2 cup petite peas

The gravy recipe is what we make for two people. It takes 14 minutes to cook the biscuits and about 10 minutes to make the gravy. So you may want to start the gravy soon after putting the biscuits in the oven.

Preparation:

In medium skillet sauté the onions in a little oil. Cook until tender, but slightly firm. If using a lid on your skillet a couple spoons of water makes steam to improve the cooking.

When the onions are done, on very low heat, add the flour to the cooked onions. While stirring, add just enough oil to be able to mix the flour into oil to produce a smooth mixture; no lumps. Cover the skillet and let the flour cook for another three minutes or so; stir as needed to prevent sticking or burning.

Pour in the soy milk and the broth, then stir until blended well. Add the burger and the peas. Increase the heat while stirring to keep it smooth. As the gravy cooks it will thicken. When sufficiently thickened, turn off the heat.  Add more milk if it becomes too thick.

If your gravy doesn’t thicken sufficiently you can, in a separate small bowl, stir water and a tablespoon of flour together. Make this mixture just watery enough that it can be easily poured into your gravy. Then, heat and stir, and slowly pour in what you need until you get the consistency you desire for your gravy.

Salt to taste and serve.
