Tofu Scramble

Ingredients:

1/4 cup chopped red onions
1 cup mixed vegetables
12 to14 ounce, firm or extra firm, tofu *
Broth *
1/2 tsp. turmeric
1/4 cup burger *
Cooking oil  (I use avocado or olive)
Soy sauce (To taste)
Seasoning (Italian works well for this)
Salt (To taste)

Preparation:

In a large covered skillet, sauté the chopped red onion and mixed vegetables in your favorite cooking oil (I add a small amount of water to produce some steam). When the vegetables are cooked, but slightly firm, mash the tofu. (I put it in the skillet with the cooked vegetables and mash it with a potato masher).

Sprinkle the turmeric evenly over the mashed tofu and vegetables, pour in the broth, add the veggie ground and stir until the turmeric colors the tofu evenly. Add seasoning of choice: Italian, soy sauce, etc.

Over low to medium heat, stir occasionally until the moisture is cooked out; five minutes or so, Salt to taste.

It’s great in burritos, pocket and open-face sandwiches, and a tasty addition to salads and soups as well. Enjoy!
